Chocolate Chia Pudding Parfaits

Make-Ahead Breakfast

When I started to look for heathlier breakfast ideas for my family, I came across lots of chia seed pudding recipes. I thought that was so weird! But I decided to try a few. And guess what? I liked them 🙂

My family’s favorite is a twist on a chocolate chia seed pudding recipe from Real Food Whole Life.

I knew I’d have a little difficulty getting my kids to be on-board for this new breakfast option so I switched it up and made individual parfaits. It was a hit!

Chia Pudding Parfait

Ingredients

1 can full-fat coconut milk/coconut cream
your favorite non-dairy milk
chia seeds
cacao or cocoa powder
honey
graham cracker crumbs (or your healthy equivalent
cherry pie filling (or make your own fruit compote)
Greek vanilla yogurt

Directions
The night before make the chocolate chia seed pudding following the recipe from Real Food Whole Life.

The next day layer the following in 8oz canning jars

1. Graham cracker crust
2. Chocolate chia seed pudding
3. Greek yogurt
4. Cherry Pie filling (or fresh fruit)

I like to make these up and store in the fridge for quick and easy breakfasts and snacks! It’s one of my mom hacks to get through busy weeks.
